Strawberry Pie!
1 Cup flour
1 Tblsp Sugar
1/3 tsp Salt
1/3 Cup oil
1Tblsp milk
Crust: Mix together above ingredients. Pat into a 9" pie pan. It helps to moisten your hands with oil as you press it into the pan. Bake at 425 for about 10 minutes. Watch it closely, it burns easily.
Filling: Mix 1 Cup water, 1 Cup sugar and 2 Tblsp corn starch. Cook until thickened and bubbly. Then add 1 Pkg strawberry jello. Let cool.
Add 3 Cups fresh cut strawberries, (you can make your strawberry chunks as big or little as you want... I use an "egg slicer" to cut mine, it takes a lot let time) and pour into cooled pie shell. You can also crush some fruit and add to boiling jello mixture.
If you have leftover filling, you can use it for strawberry shortcakes or serve it by itself in a pretty dessert bowl.
Refrigerate a long time, and then serve with cool whip. Make sure you plan enough time to let it cool in the refrigerator. If you want to have it for dessert after dinner, make the pie in the morning and chill until you're ready to serve it. In the past, I've made the mistake of not giving it enough time to cool and have had to serve goopy pie for dessert to guests. It still tasted good, but the pieces of pie looked more like strawberry globs. "Instead of strawberry pie", we called it, "Strawberry Pile" :o)
