Mother's "Great Buns"
This is our family favorite dinner roll recipe. I am a picky bread connoisseur… I judge a restaurant by how good their pre-meal bread is! This is by far my favorite bread recipe to make…. Because it is so easy, and the rolls always turn out moist, fluffy and delicious. They are always gone whenever I take them to share with friends. (Dr. Mohler thinks they taste wonderful too! :o)
• 1 Cup Water
• 1 tsp salt
• 3 Tblsp plus 1 tsp sugar
• 1 egg
• 5 1/3 Tblsp softened butter
• 3 1/3 cups bread flour (maybe a little bit more depending on your climate… here in KY, I need about a spoonful or so more otherwise the dough turns out too sticky)
• 1 Tblsp bread machine yeast
• 3 Tblsp dry milk powder
Put ingredients into bread machine in order. At the finish of the dough cycle, remove dough onto a lightly floured surface and cut into 16 pieces. (I’ve found that it is easiest to use a bread knife that is sprayed with pam so the dough doesn’t stick to it)
Shape into rolls (with the least bit of handling as possible)
Let rise in a very warm place for 30 minutes or until doubled. (I set the oven for about 200 and then turn it off and put the rolls in to rise)
Bake at 350 for about 8 minutes. ( they should be a slight golden brown on top… don’t overcook them!)
It takes a total of about 2 ½ hours from start to finish

A peek into my brain...
“Good! Jane is down for her nap…I think I’ll go upstairs and meet the new neighbors… oh wait, I still need to pop the muffins into the oven, I was going to bring them some… and now the batter bowl needs to be cleaned…better do it now while I’m thinking about it…. man! All those dishes in the sink have to get done too… I should get those washed before it’s time to make supper so I won’t have a sinkful of clean dishes that are still wet and in my way…I almost forgot… I still need to put in a load of laundry so it will be done by this evening….but I have to rinse out a stack of diapers before they can go in the wash… hmmm... the bathroom reminds me that there is that leak in the toilet that I need to call the maintenance guy about but right now I have to get those diapers rinsed...oh yeah, I bought a new pair of rubber “diaper” gloves today at the store, I think they’re still in the grocery bag … oh look at all those grocery bags that need to be unloaded! Ah! But I can’t unload them into the pantry because there is no room, it needs to be organized…that could take all afternoon…. And look what time it is! I should go meet the new neighbors before Jane wakes up…oh yeah… The muffins!!”
